Maida/All purpose flour: 2 cups
Palak/Spinach: 1 big bunch
Green chillies: 8-10
Garlic: 3-4 pods
Ginger: 1" long
Cumin seeds/Jeera: 1tbs
Curry leaves: 1 string(optional)
Oil for deep frying
Salt according to taste
Method:
- Take the spinach bunch n seperate the leaves from its stem(discard the stem, but can use the tender ones) n wash the leaves throughly.
- Grind the raw leaves along with green chillies, ginger n garlic,cumin seeds n curry leaves into a fine paste.
- Take a mixing bowl n add the flour, salt n the spinach paste n knead them together until you get the chapati dough consistency.Dont add water for mixing, the moisture in the spinach will be sufficient to mix.Keep it aside for about 15 mins.
- In the meanwhile heat oil in a frying pan.
- Now pull out a lemon sized ball from the dough n roll the dough in to a thin chapati/roti shape. With the help of a knife cut the rolled dough into small square shape n deep fry them until they turn crispy.
- Follow the same procedure with the remaining dough.
serve them as a crunchy snack n can be stored for days.
